Apple Pound Cake

Ingredients:

  • 2 cups granulated sugar
  • 1 ½ cup Canola oil
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 tsp. Salt
  • 1 tsp. Baking soda
  • 1 tsp. Vanilla
  • 1 cup raisins
  • 1 cup chopped pecans (or walnuts)
  • 1 cup flaked coconut
  • 3 cups diced apples

Instructions:

  • Preheat oven to 325 degrees.
  • Mix together sugar, oil and eggs.
  • Add dry ingredients and mix together.
  • Add vanilla, raisins, nuts, coconut and apples. Mix well.
  • Pour into bundt pan.
  • bake for 1-½ hours - or until golden and toothpick comes out clean.

Icing

  • In large saucepan mix together the following ingredients:
  • 1 cup milk
  • 1 stick margarine
  • 1 cup brown sugar
  • Bring to a boil and maintain a boil for one minute.
  • Pour over hot cake.
