Lumpy Girl Claire's Diet
Twinkie, Twinkie, Little Star

I am insane. There's no other possible reason why I did what I did. What could I have been thinking?

Now I can't get that image or that smell out of my head. Even worse I touched it and got it all over my fingers. I tried not to get it in my mouth, but it was a reflex action. And the odor was making me dizzy. I am such a fool!!

I knew I was in trouble when I started gathering the hazardous ingredients. This combination was going to be deadly. The spongy yellow, the oozing white, the thick, sticky red.

In my defense, I did it out of love. There is no other reason I would have put myself in such jeopardy. And despite the havoc it has wreaked upon me (and my diet), I would do it again in an instant, if asked.

Why? Well, for my dear Dad, of course.

I made him a Twinkie cake for Father's day.

What is a Twinkie cake, you may be asking? Well, I can tell you that it's the last thing you would want to be making if you were on a diet. There is no possible way to resist the sweet, spongy goodness.

I don't know how much walking it's going to take to burn off a serving of this, but whatever I have to do, it's so worth it!!

I got this recipe from a friend.

Strawberry Twinkie Cake

1 box of Twinkies
1 small box of instant vanilla pudding
2 cups milk
1 can strawberry pie filling
1 container Cool Whip

Split the Twinkies in half lengthwise and use the bottom halves to line an 8x8 square pan. Spread on pie filling and then top with the Twinkie tops.

Make pudding according to dictions on the package and pour over Twinkies. Refrigerate to set. Before serving, frost with Cool Whip.

Happy Father's Day, Dad!

Love, Claire
